Fall Treats with a Healthy Twist
It’s the season for all things PUMPKIN! And, these Pumpkin Muffins with Maple Cream Cheese will not only not disappoint, but also not throw your nutrition off track. Trust me, I love me some Starbucks pumpkin loaf, and their pumpkin cream cheese muffin?? To die. But, SO not worth it if you are at all trying to maintain a certain level of health and fitness.
Their quick and easy to make, and picky toddler tasted and approved. The recipe is from the FIXATE cookbook, but I have a few things I’d add for an even better flavor that won’t change the nutritional stats.

**I’d also love to try using gluten free oat flour as opposed to almond flour, and see what it does to the taste and texture! That will change the container equivalents, so beware if you try it out.
