Summer is in full swing here… and by that, I don’t exactly mean vacations filled with relaxation. I mean it’s hot! The temps are averaging mid nineties and up! I’m sure I’m not alone here, but when the heat comes, my appetite and desire to cook go. No?! These Simple Shrimp Tacos, however, are one of the few things we can make with little effort and enjoy over and over.
Between driving to swim lessons, summer camp, and trying our hardest to get in all the summer things, we’ve had little time and energy left to spend on cooking crazy dinners. Thankfully, my hubby loves to grill and will take that off my plate anytime! Even if you aren’t able to grill, you can quickly cook the shrimp on the stovetop and have dinner done in 10 minutes.
One thing I love about shrimp is that it’s super high in protein. It’s a great way to get out of the grilled chicken and ground turkey ruts! I’ll also add that if you are following a low carb diet, shrimp is very low carb. You can also swap out the tortillas for butter lettuce leaves. I do that swap often!
